
Chocolate Decadence Cake
A rich and indulgent chocolate cake layered with a smooth chocolate mousse, perfect for special occasions.
Ingredients
Cake Ingredients
- 4 eggs, separated
- 200g powdered sugar
- 100g all-purpose flour
- 70g potato starch
- 70g ground almonds
- 2 tablespoons cocoa powder
Chocolate Mousse
- 100g dark chocolate (minimum 60% cocoa)
- 250g mascarpone
- 250ml heavy cream (36%)
- 3/4 cup powdered sugar
Soaking Syrup
- 3 tablespoons vanilla extract
- 6 tablespoons strong tea with lemon
Additional Ingredients
- 70g chocolate shavings (half reserved for mousse topping)
- 6 tablespoons powdered sugar for the mousse
- 6 pieces chocolate-covered biscuits for decoration
Instructions
- Preheat the oven to 180°C (350°F). Grease and flour a cake pan.
- For the cake, beat the egg yolks with the powdered sugar until pale and fluffy. Gradually add the sifted flours, ground almonds, and cocoa powder, mixing until just combined.
- In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the batter, being careful not to deflate them.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely.
- For the mousse, melt the dark chocolate over a double boiler or in the microwave, then set aside to cool slightly. In a large bowl, beat the mascarpone, heavy cream, and powdered sugar until smooth and creamy. Gradually fold in the melted chocolate until well combined.
- Once the cake has cooled, cut it horizontally into two layers. Brush each layer generously with the soaking syrup.
- Spread a thick layer of chocolate mousse between the two cake layers and on the top and sides of the cake.
- Decorate the cake with the reserved chocolate shavings and the chocolate-covered biscuits.
- Chill the cake for at least 2 hours before serving to allow the flavors to meld and the mousse to set.
